Happy St. Patrick's Day!

Usually, we leave this holiday to the birds, but today decided to have a little fun with it.  Kelly and I started off with some green eggs for breakfast.  There wasn't any ham to go along with it or we would have done it for sure.  We did make breakfast tacos out of them though.

Wasn't long after we had the idea of making a rainbow cake for dinner and set off in search of supplies.  Seems apparent though, that our little town leaves this holiday to the birds also.  We went to three stores and came up empty handed for trinkets. Other than some t-shirts and hats, we couldn't find anything.  No gold coins.  Nothing.  So we just went with the whole rainbow in the sky theme and chose white frosting as our cake 'decor'.

Anyhow, two cake mixes, two frostings, some milk and a box of white mac & cheese (just sounded good for lunch) and we were on our way home.  Mixed up the cakes, pulled out the two boxes of food coloring I have and there's no red in either one!  Guess what... back to town we go.  Two stores later, we found food gel.  It didn't even matter by this point, I wasn't going on another wild goose chase.

When we got home, we mixed the colors and baked them up.  Here's the results...and by the way, it really was fun to see it come together.

And yes...yes the bottom layer does look concrete.
Purple is a tricky color to mix.. lol :)
