
Sometimes I make things way harder than they have to be, especially when it comes to meals. I was doing dishes last night (we don't have a dishwasher) and thinking about how many times I cooked for people during the day. There are five people living here and most everyone works different shifts so there's always someone else here when I fix my meals, which means I make theirs also. And I don't mind doing it, it's just time consuming and feels like the better part of the day is spent cooking. So with that in mind, I decided to make up as many easy or no-cook meal choices as I possibly could and today's entry is the result of one of those items, the homemade "lunchable."
It's funny how old my daughters are and how much they still love the original Lunchables. I think they taste flavorless and I'm always hungry after eating one anyhow, but the convenience idea is wonderful. Well, here's my personal take on this easy meal.
1oz leftover chicken breast (boneless/skinless)
1oz pepper jack cheese
1 hard-boiled egg
1 serving whole wheat round crackers
You can substitute any of the items to suit your own personal tastes, but this worked wonderfully for me and mine.
