Flatbread BBQ Chicken Pizza-ish


Easy? Check.
Filling?  Check
Good tasting?  Check.
Cost Effective?  Check.
Under 30 minutes to make? Check


Folks, we have a winner!

So last week when I went to the grocery store, I came across some flatbreads.  Hubster loves the flatbread from Subway, so I thought, we'll give it a try.  When I got home, I saw a picture of a pepperoni pizza on the package, which they had made it into.  Nifty, I thought, but what a shame we have no pepperoni.  The wheels started turning, smoke started rising and I was rifling through the fridge looking for other alternatives. 

We had some chicken, barbecue sauce and mozzarella cheese... and that sounded like a plan to me.  I grilled the chicken, tossed it with less than a 1/4 cup bbq sauce (which covered enough chicken for 3 of these), spread it on the flatbread and then added a serving of cheese.  Toasted at 375° for about 10 min and bing..Dinner is done.  Hubby shook a little more bbq sauce on top when it came out to pretty it up.  It's not needed, but it was about a tablespoon. 

Seriously, this couldn't be easier and it's a favorite here now.  Plus it's big enough that you can split it in two and save the rest for another meal if you want.  Either way, it's about 10 points total (that's on the high side) and it's so good.

Just in case you're wondering, I used the Light Italian Flatbread and it was $2.99 (same price online) for 6 at the store where I shop.
